Turkey Sausage, Egg and Cheese Baked Oatmeal

Equipment

  • 1 13x9" Casserole Dish Used for baking the oatmeal.
  • 1 Large Pan Used for cooking the ground turkey.
  • 2 Mixing Bowls Used for the turkey sausage and combining the oatmeal ingredients.

Ingredients
  

For the Turkey Sausage

  • 500 g Extra Lean Ground Turkey
  • 1 tbsp Canola Oil
  • 1 ½ tbsp Taco Seasoning
  • 1 tsp Dried Sage
  • 1 tbsp 15g Brown Sugar

For the Baked Oatmeal

  • 1 large Bell Pepper diced
  • 1 Jalapeño diced
  • 1 medium Onion diced
  • 1 cup Baby Spinach 50g
  • 3 cup Rolled Oats 240g
  • ½ cup Oat Flour 60g
  • 2 large Eggs
  • 120 g Light Marble Cheddar shredded
  • 220 g Skyr Yogurt
  • 2 cups 2% Milk
  • 1 tsp Baking Powder
  • 1 tsp Salt

Instructions
 

  • Preheat the oven to 375 °F.
  • In a medium bowl add the ground turkey with all of the seasonings. Mix thoroughly to season the meat throughout.
  • In a large pan over medium high heat add ½ of the canola oil, then add in the seasoned turkey meat. Brown it on both sides, chopping it up with a wooden spoon and cook it until no pink color remains. Set aside in a bowl for later.
  • Dice the onion, bell pepper and Jalapeño. Add the remaining canola oil to the pan, then add in the diced veggies and baby spinach. Season with salt and cook for a few minutes to soften the veggies. Set aside in the bowl with the turkey sausage, to be used later.
  • In a large bowl add the eggs, milk and Skyr yogurt. Whisk to combine.
  • Add the oats, oat flour, baking powder, salt, turkey sausage sausage, veggies and shredded cheese. Mix to combine everything.
  • Spray a 13x9" pan with oil, add the oatmeal mixture and spread it evenly across the pan. Bake for 45 minutes or until the center is set.
  • Once baked, cut into 6 even pieces and add to meal prep containers. When ready to eat, microwave for 1 ½ minutes and eat while warm. Top with hot sauce or chili oil.
