Ingredients
  

  • ½ cup Rolled Oats blended into oat flour
  • 1 tbsp Coconut Flour
  • 2 scoops Vanilla Whey Protein Powder
  • 1 tsp Baking Powder
  • 1 tbsp Sugar
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • 1 large Egg
  • 1 medium Banana
  • ¼ cup 2% Milk
  • ¼ cup Water
  • 1 tbsp Butter for pan frying

Instructions
 

  • In a large bowl whisk together all of the dry ingredients; oat flour, coconut flour, protein powder, baking powder, sugar, salt, cinnamon and nutmeg.
  • Add the egg, banana, milk and water to a blender and blend on high until combined. Pour the contents of the blender into the dry ingredients bowl and whisk to make the batter. If the batter is too thick, add a splash of water to thin it out.
  • Bring a large pan over medium heat and add a portion of the butter to grease the pan.
  • Laddle or drizzle the pancake batter into the pan to create medium sized pancakes and let cook until the underside can be moved with a spatula. Flip and cook until golden and lightly browned. Re-grease the pan with butter and repeat until the batter is used up.
  • Serve while hot with maple syrup and fruit if desired.
